Phila Mbambo is a Brewing Technical Specialist in New Product Development at Signal Hill Products, where she supports the development of new beer products through fermentation optimisation, process improvement, sensory evaluation, and quality assurance. With a strong background in microbiology, she blends solid scientific knowledge with a practical love for brewing to improve product quality and drive innovation in the industry. She is currently completing her Master’s research in Microbiology at the University of KwaZulu-Natal, although her professional passion has fully shifted toward brewing science and product development.
Phila’s brewing journey began somewhat unexpectedly in 2023 when she joined the University of KwaZulu-Natal team for the Intervarsity Brewing Competition. At the time, she wasn’t much of a beer drinker and had viewed it as a man’s drink. However, she was quickly captivated by the science, creativity, and craftsmanship behind every batch; a perspective that completely changed her outlook. Along the way, she developed a particular appreciation for sour beers and the remarkable diversity of beer styles.
That first year, the team took Gold in the Lager category. In 2024, Phila stepped up as Team Captain and led the group to a Silver medal in the Summer Beer category with their refreshing maize lager. These experiences sparked a deep passion that ultimately led her into a full-time career in new product development within the commercial brewing industry.
As a speaker, Phila hopes to share her journey from university brewing competitions to the commercial brewing industry, encouraging students to embrace opportunities outside their comfort zones and demonstrating how curiosity, teamwork, and a willingness to learn can lead to unexpected and fulfilling career paths.
